: PAST-217: Pastry Arts Capstone. Creation of a new course PAST-217: Pastry Arts Capstone

(3-4-5/105). This course incorporates all the processes of the bake shop into a capstone course. Students

will take a certification examination as well as a final practical examination that is evaluated by industry chefs.

Includes managerial concepts of the bake shop to include cost control. Plating, sanitation, and display

techniques will be emphasized.
